CONTRACTUAL FARMING
Macedonian Thrace Brewery was the first to introduce the concept of contractual farming of malting barley in Greece back in 2006.

Since then, we have managed not only to cover our own needs in malt, but also to supply almost 90% of Greece’s independent brewers with our premium quality, Greek Thracian Malt. The benefits for both sides are very significant:

Every year about 2.500-3.000 hectares are cultivated and approximately 13.000-14.000 tons of barley are harvested in the Greek regions of Macedonia and Thrace.
At the same time, over the last four years, we have begun the transformation of Greece into a net exporter of malt, with dozens of satisfied clients throughout the Balkans and the Eastern Mediterranean, such as Israel, Cyprus, Turkey, Bulgaria, Albania and elsewhere.
In addition, we implement high standards of integrated, environmentally friendly agricultural production management (Agro 2.1, 2.2) and we have specialized personnel overseeing every stage of the production process, from the field to the final customer.

MALTING PLANT
Our desire to be self-sufficient, while being able to control the supply and quality of our basic raw material were the primary reasons which led us to establish our very own Malting Plant.

Phase one of our state-of-the-art Malting Plant was completed in 2014, while Phase two, which doubled our production capacity, was completed in 2017. Greece’s first Greek owned malting plant and one of the most technologically advanced facilities of its kind supplies our Thracian Malt to dozens of independent breweries throughout Greece and the Eastern Mediterranean.

  1. We only use water and barley without any additives or plant hormones, under strictly controlled temperature, humidity, and ventilation conditions; as such, our Thracian Malt is the ideal choice for all the breweries that strictly adhere to the traditional German purity law (Reinheitsgebot).

MALTING STEPS FOR THE PRODUCTION OF OUR THRACIAN MALT
1 Receiving & Weighing
The amount of barley received is determined by weighing. Receiving depends on strict criteria regarding the protein and moisture values of barley.
2 Storage of barley in silos
The barley is stored in silos, in strictly controlled temperature and ventilation conditions, to ensure its quality standards.
3 Barley Cleaning & Weighing
The grains that will be used to produce our Thracian Malt are thoroughly cleaned and sorted according to their size. This ensures unvarying steeping and germination of the grains.
4 Steeping
To achieve optimal moisture for the germination step, the grain is submerged in water. This phase lasts 2 days, under strictly controlled temperature, humidity, and ventilation conditions.
5 Germination
The purpose of grain germination is to activate their enzymes. The malting barley is kept in strictly controlled humidity, temperature, CO₂, and ventilation conditions.
6 Kilning
Kilning takes place slowly at low temperatures to protect malt enzymes. Then, by raising the temperature, and depending on the recipe, the subsequently occurring biochemical reactions enrich the malt with color, flavor, and aroma. Kilning lasts 20-24 hours and we use the latest energy conservation technology.
7 Storage of malt in silos
The malt is stored in specially designed silos at ambient temperatures.
8 Packaging
Thracian Malt is available in recyclable sacks size of 25 kg/55 lbs, big bags of 1.000 kg/2.200 lbs or in bulk loads.
SUSTAINABILITY
Environmental conservation has always been a primary concern for Macedonian Thrace Brewery and for this reason we are constantly investing in the latest technology to achieve the best possible results.
  1. Our company minimizes its carbon footprint through specially targeted actions. The strategic location of our facility at the center of our contractual farmers lands throughout Macedonia and Thrace, minimizes the transport distances of our barley.
  2. We have substantially contributed to the reduction of CO₂ emissions, by saving energy and keeping water use at a bare minimum, from sowing in the field through to the final production stages.
  3. We have achieved through the implementation of integrated management systems (Agro 2.1, 2.2) the reduction of inputs and the minimization of the environmental contaminant residuals in Thracian Malt.
  4. We implement far-reaching recycling programs, contributing to the conservation of raw materials and energy.
